Quinoa & Chicken Wrap 

In this era of healthy eating and weight watching where some people don’t have a lot of food options because they are counting calories, eating can become boring or seem like a chore. As a weight watcher i encourage you to be creative with your style of eating.

Here is a recipe for quinoa and chicken wrap , let me introduce you to quinoa in case you don’t know what it is –

Quinoa is a health food, and very popular in some parts of the world.

Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids..

It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. it is high in fiber and more preferable to rice.

INGREDIENTS
1/2 cup cooked quinoa
1/2 cup garlic-herb spreadable cheese
4 flavored flour tortillas of your choice (8 inches), room temperature
4 large lettuce leaves
1/4 cup chopped red onion (optional)
3 plum tomatoes, cut into thin slices
1 package (6 ounces) thinly sliced deli smoked chicken breast or 5oz cooked chicken breast (chopped into pieces)
1 medium cucumber, cut lengthwise into thin slices
1/2 cup shredded carrot
low calorie dressing of your choice (optional) avocado (optional) kidney beans (optional)

NOTE: you can make it as colorful and interesting as you wish, but ensure you go big on healthy vegetables .

STEPS
Cook a batch of quinoa according to the instructions given on the package, then set it aside.
Spray a skillet with olive oil and set it on medium high heat. Toss in chicken breasts and season them with a little sea salt and pepper.
Once the chicken has finished cooking, remove the chicken from the skillet and allow it to cool down before cutting it into pieces.
In the same skillet, toss in chopped kale with few tablespoons of water. This will help to wilt and soften the kale. Do not overcook the kale – no more than two minutes. Remove the kale from the skillet and allow it to cool down to at least room temperature.


Place the kale in a bowl and toss in the remaining ingredients for the salad. Mix the salad together using tongs, ensuring that the entire mixture is covered in the salad dressing of your choice.
Dump the contents of the salad onto the whole grain tortilla and then add the chopped chicken breasts, then roll the tortilla to create the wrap. enjoy over any drink of your choice.
